  • Pushin' Up Daisies

    Reprising the iconic role of ‘Margarita’, which translates directly to 'Daisy' in English, our masterpiece reflects a light and floral twist, comprised of ingredients that elevate the smooth notes of Espolon Blanco.

    Mezcal Fix

    Meteoro Joven | Lime | Roasted Pineapple | Cynar | Sea Salt


    Fix, a forgotten category of cocktails made with pineapple syrup is making its comeback. For the house-made pineapple syrup in this particular drink, one whole pineapple is roasted for three hours before it is puréed and blended with Demerara sugar. Will Cynar, an Italian artichoke bitter, and the smoky character of Mezcal, remind one of ‘Tepache’, the popular fermented pineapple beverage enjoyed throughout Mexico?

    Ocho Tequila Flight

    Get up-close and personal with the world’s first and only ‘Single Estate’ and ‘Vintage’ tequila produced in the most traditional methods, highlighting the purest flavour of agave and showcasing how ‘terroir’ is also applicable to agave spirits. With each flight featuring three serves, taste them in succession for yourself in a poco poco (small small) or a poco mas (little more) portion to experience the diversity and complexity of ‘terroir’ in tequila.

    Beyond Sunrise

    A mature rendition of the ‘Tequila Sunrise’ cocktail which goes ‘beyond’ its predecessor with the addition of lemon, yuzu and sea salt. The standard grenadine has been replaced with a house-made port and pomegranate reduction, enriched with muscavado sugar, and finished with chipotle chilli powder for a spicy kick.

    Our modern interpretation of the classic ‘Old Fashioned’ is inspired by the rich and flavourful agave. A moreish composition brimming with rich, nutty aroma and the bold agave flavour of tequila and mezcal.

    Pink Chihuahua

    Created by the late Dick Bradsell, creator of the Espresso Martini, this tequila-based tipple is named after the famous bar in Soho, London, where Dick worked until his final days. Smooth, tangy and refreshing with subtle almond notes from the orgeat make this tipple a definite crowd pleaser and homage to one of biggest legends of our industry.
